The secret to Mediterranean cooking: 7 spices

When people ask me “when do you have the time” to provide your family with healthy dishes every day when you work over 50 hours a week, I simply answer; organization and a second freezer! This week, I will share with you how to prepare the Chicken broth used in the Middle Eastern home cooked meals. The broth can also be made with beef or lamb. It’s the basis for most dishes and can be stored in the freezer for up to 3 months. Once prepared, it’s very quick and easy to make recipes over the weekends by adding vegetables and rice.

First you need to learn the secret of the Mediterranean cuisine: the spices. Meat, poultry, fish and vegetables are seasoned with many fragrant and aromatic spices called “Bharat”, “Baharat” or 7 spices. It is the most popular mix used in the Middle Eastern and Greek cuisines. There are many different recipes for 7 spices; each region has its own recipe.

This is the Syrian recipe I use:

2 tbsp ground black pepper

2 tbsp ground cumin

1 tbsp coriander

1 tbsp ground cloves

1 tsp ground nutmeg

1 tsp ground cinnamon

½ tsp ground cardamom

Once you prepare the mix, store it in a glass container in your spice cabinet. You can also buy the mix at a Mediterranean shop or even on Amazon.
